About

Who are we?

Encurtidos Murcianos is a small family business located in Fuente Librilla, a village of 560 inhabitants near the Sierra Espuña natural park.

In this dry-climate region, with cold winters and arid summers, a rain-fed agriculture has developed over centuries, based mainly on olive and almond trees, along with the harvesting of wild plants such as the caper bush.

Various natural methods were used to preserve these foods, pickling among them, and given their characteristics, the most common practice was to pickle olives and caper bush fruits, obtaining a tasty product that would keep over time.

This is the centuries-old tradition on which we built our company, making the dream of showing the world part of the culture and craftsmanship of our region come true.

We have been offering our products in Spain and abroad for almost 25 years, working every day to improve our means and our production, without ever giving up our artisan tradition and identity.

Our history

From the caper bush to the jar

It all began by selling caper bush stems, capers and caper berries that we had already been harvesting for years and selling to other companies. Later we took the leap into making our own olives, with our own production, hand-picked harvesting and a seasoning with aromatic plants native to our region.

The bitterness is removed through several water washes, without lye or abrasive substances. The olives are then macerated in brine with aromatic plants, requiring a long curing process. Preservation is completed through pasteurisation, with no preservatives or artificial additives of any kind.

Every jar holds all the flavour, colour and texture our olives develop through a long, delicate and purely natural maceration process.

Our first products

  • Gordal olives, whole or split, macerated in brine with fennel, or cooked and dressed with aromatic herbs, garlic and paprika.
  • Marteña or picual olives, split and macerated in brine with aromatic herbs such as thyme and bay leaf.
  • Ciezana olives, crushed or whole, macerated in brine with fennel.
  • Cornicabra olives, whole, macerated in brine with thyme.
  • Cuquillo olives, whole or split, macerated in brine with thyme.
  • Stems, capers and caper berries: the tender stem, flower and fruit of the caper bush. They are macerated in the sun for a short period and then preserved in brine; for sale, the salt level is lowered and wine vinegar is added.

Years later, driven by market demand, we introduced more commercial olives and pickles with new flavours: manzanilla and gordal olives with anchovy or paprika dressing, gazpacha-style seasoned olives, dry-cured cuquillo olives, gherkins, pickled onions and much more.
